Oreo Peanut Butter Brownie Muffins

The fact that this recipe only requires THREE ingredients leaves you with no excuse not to make it immediately (unless you are allergic to peanut butter, or even even worse, dislike chocolate).  I’m not really sure if we can be friends if you don’t like chocolate so you should probably just stop reading this now. Thanks to Trader Joe’s Ready to Bake Brownie Mix this took barely any time to prep.  Next time I might try making a healthier brownie batter from scratch to lighten the recipe up but it’s hard to pass up the shortcut. The only part that really takes “work” is spreading delicious peanut butter on top of delicious Oreos.  Need I say more?

Oreo Peanut Butter Brownie Muffins
Adapted from Picky-Palate 

INGREDIENTS
24 Oreos (I use reduced fat)
1/2 cup creamy peanut butter (I used Better N’ Peanut Butter)
Brownie batter meant for an 8×8 pan

Preheat your oven to 350 and line a muffin tin with paper liners.

Spread 1 tsp of peanut butter on top of an Oreo.  Stack another Oreo on top and spread another tsp on top of that.  Drop your double oreo concoction into the center of a muffin liner.

Repeat 12 times.

Spoon 2 tablespoons of brownie batter over each Oreo.

Pop in the oven for 18-20 mins.
