Yummy Cheesecake Brownies

Brownies + cheesecake = what are you waiting for and why haven’t you decided to bake these yet?  I needed to whip something up pretty quickly last weekend for a kickball birthday, and these babies sure did the trick. The recipe is for an 8×8 pan so I decided to make two batches – one with chocolate chips and one without. Next time I would probably just double the recipe and bake in a 9×13, with chocolate chips of course.  That would work, right?

For your brownie batter:
1 stick (1/2 cup) unsalted butter, cut into pieces
3 oz unsweetened chocolate, chopped
1 cup sugar
2 large eggs
1/2 teaspoon pure vanilla extract
2/3 cup AP flour

For your cheesecake batter:
8 oz cream cheese, well softened (I used Kraft Philadelphia Neufchatel 1/3 Less Fat)
1/3 cup sugar
1 large egg yolk
1/4 teaspoon pure vanilla extract

For the delicious added bonus on top:
1/2 cup semisweet chocolate chips

Butter an 8×8 inch pan and preheat oven to 350.

The recipe says to heat butter and chocolate in a heavy saucepan or double boiler.  I was lazy and melted the chocolate in the microwave. Then I melted the butter in a few bursts in the microwave and combined. Whisk together.

Then, whisk in eggs, sugar, vanilla and pinch of salt until combined.  Don’t be afraid to over mix at this point. Now, whisk in your flour until just combined.  You don’t want to over mix here.  Spread brownie batter into your pan.

It’s time to make your cheesecake batter.  Whisk the cream cheese, sugar, egg yolk and vanilla extract together in a small bowl until it’s smooth & creamy.  Dollop it on top of the brownie batter and use a knife to swirl it around, creating that marbled effect.

Sprinkle chocolate chips over the entire pan.

Bake for about 35 minutes until the edges are puffed up a little and the center is just set.  It will definitely be easier to slice these babies up once they have cooled.  Good luck eating just one!
