Healthy “Green” Smoothie

Healthy “Green” Smoothie

I am a creature of habit.  I find a pair of jeans that I like, and I wear them almost every day.  I find a lip gloss that I love and I keep re-buying the same tube when it runs out.  The same tendencies apply to breakfast.  I get in a major groove and eat the same thing every morning.  My most recent phase involves a Morningstar Farms Veggie Sausage Patty (SO GOOD!) and a “green” smoothie.  It might look green, and it might be super healthy, but I promise you it’s delicious and refreshing!

Trying to eat healthy this week?  Try a Tamale Bake or Easy Weeknight Fiesta Bowl for dinner.

Healthy Green Smoothie
Inspired by Marlyn’s Magic Morning Elixir

1 banana
1 small apple or 1/2 large (I’ve been using Honeycrisp but any will do)
1 cup unsweetened vanilla almond milk
1 tbsp chia seeds (don’t have them? just leave ’em out)
1 large handful spinach
4-5 ice cubes

Add all ingredients into a blender and blend on smoothie mode until everything is combined and there are no visible chunks left.  This usually takes about 30 seconds.  I’ve read that it’s better to blend everything first without the ice, and then add in the ice at the end.  I haven’t really noticed a difference!  This makes 1 large smoothie, or 2 smaller portions.  I’m addicted!  I’ve experimented with other fruits (frozen raspberries, strawberries), but so far this combo is my favorite.
