Perfect Dinner Party Appetizer: Caprese Skewers
Is there anything better than a recipe that looks really fancy but doesn’t take long to prepare? That’s what I love about these tomato, basil and mozzarella skewers. I have deemed these the perfect dinner party appetizer. You can’t go wrong!

Makes 15-20 skewers
1 pint cherry or grape tomatoes
10-12 oz bocconcini (Whole Foods sells a great one that’s pre-marinated in olive oil & herbs)
20-25 basil leaves, stems trimmed off
A few tablespoons olive oil
1-2 tsp balsamic vinegar
Fresh cracked pepper
Wooden or bamboo skewers
This recipe is so simple but it gets slightly monotonous when you make it. All you need to do is set up a little skewer station. Grab your tomatoes…
And your basil…
And most importantly, your cheese…
The cheese I bought was already soaked in a yummy olive oil/garlic/herb mixture. Highly recommend getting this. As for the basil, sometimes I would use a whole leaf and others I would use 1/2 depending on the size of the leaf. Totally your preference.
Skewer a piece of cheese, then add basil, follow with a tomato, another piece of basil, and end with another piece of cheese. The original recipe only had 1 of each, but who wouldn’t want to add more cheese?
Even though the cheese was marinated, I still wanted to mix up some olive oil, balsamic, a few shakes of garlic powder, sea salt and freshly cracked black pepper to drizzle over the skewers. If your cheese isn’t already marinated you might want to toss it up in a similar mixture and let is sit for about an hour before you assemble your skewers.
