Make This Now:  Game Day Taco Chili

It’s almost time for the SUPER BOWL!!!!!!!!!!

Did I fool you?  Did you think I was excited for the game?  Truth be told, I don’t care about the NFL.  However, I do love me a good Super Bowl party…especially when I’m hosting and especially when I win the squares pool.   Yes, we’ll order pizza and wings, but I’ve been thinking of a few delicious things I can whip up to supplement the take-out.

A perfect excuse to make this chili again!  Here is another “throw it in the crockpot and you’re done” recipe that is quickly becoming part of our dinner rotation.   Not only is it super-amazing-crazy-delicious, but it’s also loaded with fiber from the beans.  Make this now!

Game Day Taco Chili

1 onion, chopped (I omitted and threw in 3 garlic cloves)
1 16oz black beans
1 16oz can kidney beans
1 8oz can tomato sauce (I used TJ’s)
10oz package frozen corn kernels
2 14.5oz cans diced tomatoes with chiles
1 packet taco seasoning
1 tbsp cumin
1 tbsp chili powder
24oz boneless chicken breasts
1/4 cup chopped fresh cilantro (I omitted)

Combine all ingredients in your crockpot except for chicken and cilantro.

Place the chicken on top and put the cover back on.  I cooked on high for 6 hours, but you could also cook on low for 10.

30 mins before serving, take the chicken out and shred it with 2 forks.

Stir it back into the chili in the crockpot along with the cilantro if you’re using it.  Magic!

Top with some shredded cheese.  Mmm.
