Easy breakfast alert! Take half an hour to make these on Sunday night and you are set for the week. There are endless opportunities for ingredient combos. I used spinach and mushrooms, but feel free to customize these to your liking…green onions, tomatoes, zucchini, the list goes on. Long day at work + Bachelorette finale means I am not in the mood to spend time making dinner. I don’t even really watch The Bachelorette, but it’s on, so why not?
In comes…breakfast for dinner! I whipped up this sandwich yesterday morning and I have been thinking about it ever since. The whole thing takes all of five minutes plus I happened to have the ingredients on hand. I hardly consider this a “recipe,” but hey, I didn’t think of it until this weekend so maybe you’ll enjoy it too.
